Apple cheese is a traditional Lithuanian dessert or snack, usually made in autumn when apples are already riped, the weather cools down and You want to fill home with warmth and wonderful aromas.

If You would like to make an apple cheese here is the recipe.
Ingredients
7 kg apples (better more sour if possible)
1.5 kg sugar (depending of sourness of apples can be more or less)
½ teaspoon cinnamon (optional)
Preparation
- Wash the apples, remove the cores with seeds and cut apples into pieces (it is not necessary to peel the apples). Put apple slices in a bowl and add sugar. Leave them at room temperature for 24 hours allowing apples to release juice.
- Pour all the released juice into the pot (without apples). Add cinnamon if You want to. Simmer the juice in a pot over low heat until half of it boils away. While juice is boiling, pour apple slices into a strainer to drip for a while.
- When half of the juice boils away, take 2/3 of apple slices and pour them into the liquid (the other part of slices leave away for a while). Cook the juice with the apple slices on a high heat until apple slices become transparent and soft. Reduce the heat and let to simmer. Stir frequently. When the mixture becomes dark, glossy and starts to bounce off the sides of the pot, pour the rest 1/3 of apple slices into the same pot. Simmer the mixture a bit.
- Then pour the hot porridge into several muslin clothes (for several cheeses) and squeeze well between two cutting boards.
- After 24 hours remove the muslin cloth and put cheeses into the new muslin clothes and hang them near the heating source (radiator or something like that). Leave cheeses to dry for approximately a weak turning them around every day. You can leave cheeses to dry more depending on the hardness You like.
